Training - Advanced Food Hygiene

Qualification: Advanced Certificate in Food Safety
Awarding Body: Chartered Institute of Environmental Health

Course Description:
This course is designed towards managers whose work environment involves food being prepared, cooked or stored and where they have responsibility for management of food hygiene issues.

Entry Requirements:
A general and theoretical knowledge and understanding of food hygiene is desired.

  • Bacteria
  • Food Poisoning & Food Borne Disease
  • Non-Bacterial Food Poisoning
  • Physical Contamination of Food & Its Prevention
  • Food Storage & Temperature Control
  • Food Preservation
  • Design & Construction of Food Premises and Equipment
  • Cleaning & Disinfection
  • Pest Control
  • Personal Hygiene
  • Education & Training of Food Handlers
  • Legislation
  • Management Control Techniques

Duration and Format:
7 x full day sessions over approx. 10 weeks
Teaching methods consist of discussions, groupwork activities, video observations and tutor input.


Assessment:

1 x 2 ½ hour written examination
2 x 1500 word assignments
These are marked externally by the awarding body.
